1. RAW HEAD ON SHELL  ON SHRIMP (RHOSO)
a. RAW BLOCK HOSO PRODUCT
The HOSO product is the most natural form of shrimp products. The antennae, tail, legs ... may be untouched or just slightly cut depending to buyers. Shrimp can be frozen in IQF or contact freezer (block frozen).
It is easy to see that there are some differences in HOSO products supplied to Japanese market and EU market, which are currently two among Sea Minh Hai's main markets for the product. Traditional HOSO block shrimp for the Japanese market is of 1.3kgs block x 6  a master carton. The size of this item is based on this 1.3 kgs weight unit, that mean size name is the number of pieces per 1.3 kgs as you can see in the table below. One important characteristic of this product required by Japanese buyers is the darker color the shrimp shell. Only the shrimp cultured in extensive ponds can have this natural color, and only limited quantity can be gathered to process HOSO of this type.

b. RAW SEMI IQF HOSO PRODUCTS
The difference of this type of HOSO from the above is the freezing and packing. This item is mainly supplied to EU market, although Japan buyers sometimes order (see b.1). Packing may be changed from buyer to buyer, but in general one can commonly see as in the following table (for b.2).

As seen in the above example, the product for EU market can be packed in 1kg /box x 10 in a cartons. However this packing can be changed to any types depending to each buyer. It is noted that gross weight is usually used together with per cent of glazing. So 1 Kg GW bag with 20% of glazing is actually 800 gms NW of shrimp and 200 gms of glaze. Size may be true count per pound or per kg, or can be frozen count per pount or per kg. This actual specification is indicated when the product is ordered, and for EU market this is rather a matter of buyer's or distributor's particular than a more generally accepted standards as one can see in other main shrimp markets like  USA, Japan...

2. HEADLESS SHELL ON PRODUCT

2.1 Block Headless Shell-on
- For Japan market: The item is usually referred to by Vietnamese packers as traditional product. Shrimp by size is frozen in 1.8kg block and six blocks are packed into a master carton (variations can be used, for example two 0.9 kg block x 6). Freshness (hence free of black spot, losen segments), shell condition (soft shell is not accepted), smell... are important criteria. This product is not treated with STPP.

2.2 SEMI IQF SHUTTER PACK HLSO
The item is for Japan buyers. Shrimp is semi -IQF frozen, laid in "shutter" layers using a PE sheet in a box of 0.5 kg x 10 per carton. Two such cartons are binded to form one bundle.

2.3 IQF EZ PEEL HLSO
1. For Japan market
Very similar to HLSO semi IQF except that the shrimp back is made a cut for "easy peeling" as the name itself expresses.

3. 1 No Chemical Treated (STPP Free) for Japan Market
Again these items are usually referred as traditional products. The most common packing style for this item is 2 kg block x 6 for a carton (PUD) or 1.8 kg block x 6 for PD.
These two products are very similar except that one is deveined while the other is not.

This group of products may be frozen in block or semi-IQF form. Shrimp is laid into bag at required weight, two bags are put in the tray then it is frozen.

4. NOBASHI SHRIMP
In Japanese Nobashi means stretching. The shrimp body is usually stretched by hands or by a mould to reach a desired length. Workers also make some cuts in the shrimp belly, cut/ trim the tail parts (telson and / or fan) so that they have certain shape....
The product is served as a convenient product for further processing into Japanese breaded shrimp.

The materials for Nobashi processing is PTO. It is further processed to meet requirements for a nobashi product (as mentioned above). Usually it is soaked, then laid on trays,   vacuum packed and sealed, then frozen and packed into master carton..

Size indication for nobashi shrimp is different from buyer to buyer. Some use a system of alphabet combined with number, for example 5L, 4L, 3L etc... Some buyer preferred to use the normal size indication based on pieces per lb. Variations in length, weight per piece, solution for soaking etc.. all make this category different from all other products. Below is an example of shrimp size, length, weight and packing. This product is for a Japanese buyer.

5. RAW IQF PTO PRODUCT
This is a common item to supply to the US market.
Some small variations in the processing of this products can be observed. These may be the hanging meat treating, the cut in the back to remove the vein or the vein is removed by a pin; soaking solution, soaking time, weight per bag ect...

6. RAW MARINATE PD/ PTO PRODUCT

This product group is targeted for Ausatralian market. PD or PTO shrimp is applied a coat of marinate, the ingredients of which may slightly or totally different for each buyer. Among the common items we can easily find are wet garlic marinate, chile marinate, parsley and lemon etc... The marinate ratio may slightly change but the most common ratio is 12% and shrimp ratio is 88%.

Marinate shrimp is usually IQF frozen and packed in 1kg/bag x 10. The packing however can change by different buyer/ importer.
